Resumo

Voltammetry is an analytical control technique that has proved to be very interesting to estimate through electrochemical measurement the content in wine of oxidation-resistant compounds in view of their aging capacity and the longevity potential of wines and it can obviously be useful to refine the selection of red wines according to categories and styles, giving more information than simple tannin measurements and tasting. Tempranillo or Tinta de País variety has turned out to be the one with the greatest aging potential, especially if the wines are aged in French oak barrels and if they are vinified in the Ribera del Duero. The wines of the Grand Reserva category, due to their pre-selection of powerful wines for aging, have greater longevities, possibly because they have a greater load of tannins, the main phenolic components that enhance aging, not so much anthocyanins, which seem weaker from this point of view.
