Résumé

In recent years, the exploration and varietal characterization work carried out at the IVICAM has allowed the identification and characterization of new vine varieties. In this work the Check All That Apply (CATA) technique has been applied to study the sensory profile of wines made with four varieties of white grapes recovered in CastillaLa Mancha, compared to Airén. The five wines were produced identically during the 2017 harvest. These varieties gave rise to very interesting wines that can be recognized as authorized varieties for providing differential characteristics to the wines. Lucomol and Pintada for intense fruity aroma,very fashionable in modern young white wines, Blanca del Tollo for its acidity and freshness in the mouth and Azargón for its marked floral carácter.
