Resumen

An optimised winery layout design reduces the production costs and improves the overall efficiency and quality of the wine-making process. However, in many cases the winery design is more influenced by visual and architectural purposes, tradition, or even the preferences of the oenologist than by engineering criteria. In the present study more than 80 Rioja wineries have been surveyed, including wineries in La Rioja, Alava and Navarra. The surveyed wineries have been classified into five different classes: cooperatives, industrial wineries with total area larger than 2500 m(2), industrial wineries with total area smaller than 2500 m(2), wineries without industrial design criteria, and small farm wineries. Information about 21 qualitative and quantitative variables has been compiled for the sample, many of them focussed on the winery plant layout. The purpose of this novel study was twofold: firstly, to obtain information about the characteristics of the existing Rioja wineries, and secondly, to collect data in order to continue analysing the winery design in further studies.
